Ingredients
- 200g sweet potato, peeled and diced
- 50g dried red lentils, rinsed
- 30g dried apricots, finely chopped
- 400ml water or unsalted vegetable broth
- 1 teaspoon olive oil
Instructions
- 1.In a small saucepan, combine the diced sweet potato, rinsed red lentils, chopped apricots, and water. Bring the mixture to a boil.
- 2.Once boiling, reduce the heat to a low simmer, cover the saucepan, and cook for 15-20 minutes, or until the sweet potato is tender and the lentils are soft and cooked through.
- 3.Remove the saucepan from the heat and stir in the olive oil. Let it cool slightly for a few minutes.
- 4.Carefully transfer the mixture to a blender. Blend until completely smooth. If the purée is too thick, add a tablespoon of water at a time until you reach the desired consistency for your baby.
- 5.Allow the purée to cool to a safe temperature before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze in single-serving portions.
