Ingredients
- 100g lean lamb mince
- 200g butternut squash, peeled and cubed
- 100g frozen peas
- 5ml (1 teaspoon) extra virgin olive oil
- 4-5 fresh mint leaves
- 150ml water or unsalted homemade broth
Instructions
- 1.Heat a small saucepan over medium heat. Add the lamb mince and cook for 3-4 minutes, breaking it up with a spoon, until just browned. Drain any excess fat.
- 2.Add the cubed butternut squash and water to the saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 10-12 minutes until the squash is very tender.
- 3.Stir in the frozen peas and fresh mint leaves. Cook for another 2-3 minutes until the peas are bright green and cooked through.
- 4.Carefully transfer the mixture to a blender. Add the olive oil and blend until you reach a smooth consistency suitable for your baby. Add a little more water if needed to thin it out.
- 5.Allow the purée to cool completely before serving. Portion into small, airtight containers for refrigeration or freezing.
