Ingredients
- 1 medium sweet potato (approx. 200g), peeled and diced
- 50g red lentils, rinsed
- 1 small zucchini (approx. 150g), diced
- 400ml water or unsalted vegetable broth
- 1 teaspoon olive oil
- 1 pinch ground cumin (optional)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the diced sweet potato and cook for 3-4 minutes until slightly softened.
- 2.Add the rinsed red lentils, diced zucchini, optional cumin, and water to the saucepan. Bring to a boil.
- 3.Reduce the heat, cover, and simmer for 15-20 minutes, or until the lentils and vegetables are completely tender.
- 4.Carefully transfer the mixture to a blender or use an immersion blender to purée until smooth. Add a little more water if needed to reach your baby's preferred consistency.
