Ingredients
- 300g butternut squash, peeled and cubed
- 50g dried red lentils, rinsed
- 40g dried, unsulphured apricots, chopped
- 1 teaspoon olive oil
- 400ml water or unsalted vegetable stock
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the cubed butternut squash and sauté for 2-3 minutes until lightly fragrant.
- 2.Add the rinsed red lentils, chopped apricots, and water to the saucepan. Stir to combine.
- 3.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the squash is tender and the lentils are fully cooked.
- 4.Carefully transfer the mixture to a blender.
- 5.Blend until completely smooth, adding a little more water or breast milk/formula if needed to reach your desired consistency. Allow to cool before serving.
