Ingredients
- 250g sweet potato
- 50g dry red lentils
- 40g unsulphured dried apricots
- 500ml water
- 1 teaspoon olive oil (optional)
Instructions
- 1.Peel and dice the sweet potato into small cubes. Rinse the red lentils and finely chop the dried apricots.
- 2.Combine the sweet potato, lentils, and apricots in a saucepan with 500ml of water.
- 3.Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until everything is very tender and the water is mostly absorbed.
- 4.Let the mixture cool slightly before transferring to a blender. Add the optional olive oil.
- 5.Blend until completely smooth. Add a splash of boiled water, breast milk, or formula to achieve your desired consistency.
