Ingredients
- 100g minced lamb
- 1 large sweet potato (approx. 250g), peeled and cubed
- 100g frozen peas
- 1 teaspoon olive oil
- 4-5 fresh mint leaves (optional)
- 250ml water or unsalted homemade broth
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the minced lamb and cook for 3-4 minutes, breaking it up with a spoon until lightly browned.
- 2.Add the cubed sweet potato and water/broth to the saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 10-12 minutes until the sweet potato is very tender.
- 3.Stir in the frozen peas and mint leaves (if using). Cook for an additional 2-3 minutes until the peas are bright green and cooked through.
- 4.Carefully transfer the entire mixture to a high-speed blender. Blend until completely smooth. Add a splash more water, breast milk, or formula to reach your desired consistency.
- 5.Allow the purée to cool before serving. Portion the remainder into ice cube trays or small containers and freeze for future meals.
