Ingredients
- 100g lean lamb mince
- 250g sweet potato
- 5g fresh mint leaves
- 1 teaspoon olive oil
- 150ml water or unsalted stock
Instructions
- 1.Peel the sweet potato and chop it into small, 1cm cubes.
- 2.Heat the olive oil in a small saucepan over medium heat. Add the lamb mince and cook, breaking it up with a spoon, until browned.
- 3.Add the sweet potato cubes and water (or stock) to the saucepan. Bring to a simmer, then reduce the heat, cover, and cook for 15 minutes until the sweet potato is very tender.
- 4.Remove the pan from the heat and stir in the fresh mint leaves.
- 5.Carefully transfer the mixture to a blender and purée until completely smooth. Add a little more water if needed to reach your desired consistency.
- 6.Allow to cool to a safe temperature before serving. Freeze leftover portions in an ice cube tray for easy meals.
