Ingredients
- 100g lean lamb mince
- 1 large sweet potato (approx. 300g)
- 150g frozen peas
- 1 tablespoon olive oil
- 5 fresh mint leaves
- 150ml water or unsalted homemade broth
Instructions
- 1.Peel the sweet potato and chop it into small, 1cm cubes.
- 2.Heat the olive oil in a small saucepan over medium heat. Add the lamb mince and cook for 3-4 minutes, breaking it up with a spoon, until lightly browned.
