Ingredients
- 100g minced lamb
- 200g sweet potato
- 100g carrot
- 30g unsulphured dried apricots
- 250ml water or unsalted broth
- 5ml olive oil (optional)
Instructions
- 1.Peel and finely dice the sweet potato and carrot. Finely chop the dried apricots.
- 2.Heat a small saucepan over medium heat. Add the minced lamb and cook for 3-4 minutes until lightly browned, breaking it up with a spoon.
- 3.Add the diced sweet potato, carrot, and chopped apricots to the saucepan. Pour in the water or broth.
- 4.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the vegetables are very tender.
- 5.Let the mixture cool slightly. Transfer it to a blender and blend until you reach the desired consistency, adding more water if needed. Mix in the olive oil for extra healthy fats before serving.
