Ingredients
- 100g lean minced lamb
- 300g butternut squash, peeled and cubed
- 50g fresh baby spinach
- 1 teaspoon extra virgin olive oil
- 1/2 clove garlic, minced (optional)
- 200ml water or unsalted broth for simmering
Instructions
- 1.Heat a small saucepan over medium heat. Add the minced lamb and optional garlic, and cook gently for 3-4 minutes until lightly browned, breaking it up with a spoon.
- 2.Add the cubed butternut squash and water to the saucepan. Bring to a simmer, then reduce the heat, cover, and cook for 15-20 minutes, or until the squash is very tender.
- 3.Remove the saucepan from the heat. Stir in the fresh spinach and cover the pot for 2 minutes to allow the spinach to wilt in the residual heat.
- 4.Carefully transfer the mixture to a blender. Add the olive oil and blend until you reach a smooth consistency appropriate for your baby. Add a little more water if needed to thin the purée.
- 5.Allow to cool completely before serving. Portion into small, sterilized containers for refrigeration or freezing.
