Ingredients
- 100g lean lamb mince
- 150g sweet potato, peeled and cubed
- 1 small apple, peeled, cored, and cubed
- 50g frozen peas
- 1 teaspoon olive oil
- 2-3 fresh mint leaves (optional)
- 250ml water (for steaming/blending)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the lamb mince and cook for 3-4 minutes, breaking it up with a spoon, until lightly browned.
- 2.Add the cubed sweet potato, apple, and 250ml of water to the saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 10-12 minutes, or until the sweet potato is very tender.
- 3.Add the frozen peas and mint leaves (if using) and cook for another 2 minutes until the peas are bright green.
- 4.Carefully transfer the mixture to a high-speed blender. Blend until perfectly smooth, adding a little more boiled water, breast milk, or formula if needed to reach your desired consistency.
- 5.Allow to cool completely before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days or freeze in single-serving portions for up to 3 months.
