Ingredients
- 250g sweet potato, peeled and cubed
- 50g dry red lentils, rinsed
- 1 medium apple, peeled, cored, and cubed
- 400ml water or unsalted vegetable broth
- 1 teaspoon olive oil
Instructions
- 1.Place the cubed sweet potato, rinsed red lentils, and cubed apple into a medium saucepan.
- 2.Pour in the water or broth, ensuring all ingredients are covered. Bring to a boil over medium-high heat.
- 3.Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the sweet potato is fork-tender and the lentils are soft and mushy.
- 4.Remove from the heat and let it cool slightly. Transfer the mixture to a high-speed blender, add the olive oil, and blend until completely smooth.
- 5.Add a little more water or cooled boiled water if a thinner consistency is desired. Serve warm or allow to cool completely before storing.
- 6.Portion into small, sterile containers. It can be refrigerated for up to 3 days or frozen in ice cube trays for up to 3 months.
