Ingredients
- 100g lean minced lamb
- 150g parsnip, peeled and diced
- 150g frozen peas
- 5 fresh mint leaves
- 1 teaspoon olive oil
- 200ml water or unsalted homemade stock
Instructions
- 1.In a small saucepan, gently cook the minced lamb over medium heat until lightly browned. Drain any excess fat.
- 2.Add the diced parsnip and water to the pan. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until the parsnip is very tender.
- 3.Stir in the frozen peas and fresh mint leaves. Cook for another 3-4 minutes until the peas are bright green and cooked through.
- 4.Carefully transfer the mixture to a blender. Add the olive oil.
- 5.Blend until completely smooth. Add a little more water if needed to achieve the desired consistency for your baby's stage.
- 6.Allow to cool completely before serving. Portion and freeze leftovers in an ice cube tray or small containers for future meals.
