Ingredients
- 150g lean lamb mince
- 300g butternut squash, peeled and cubed
- 50g fresh spinach
- 1 teaspoon olive oil
- 60-80ml water or unsalted broth, for blending
Instructions
- 1.Steam or boil the cubed butternut squash for 15-20 minutes, or until it is very tender and easily pierced with a fork. Drain well.
- 2.While the squash is cooking, heat the olive oil in a small pan over medium heat. Add the lamb mince and cook, breaking it up with a spoon, until fully browned. Drain any excess fat.
- 3.Add the fresh spinach to the pan with the lamb for the last minute of cooking, allowing it to wilt completely.
- 4.Combine the cooked squash, lamb, and spinach in a high-speed blender or food processor.
- 5.Add 60ml of water or broth and blend until completely smooth. Add more liquid, one tablespoon at a time, to reach your desired consistency.
- 6.Allow the purée to cool before serving. Portion any leftovers into ice cube trays or small, freezer-safe containers for future meals.
