- 100g lean ground lamb
- 300g butternut squash, peeled and cubed
- 50g fresh baby spinach
- 1 teaspoon olive oil
- 120ml water, for steaming
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the ground lamb and cook until browned, breaking it up with a spoon.
- 2.Add the cubed butternut squash and water to the saucepan. Bring to a simmer, then cover and cook for 10-12 minutes, or until the squash is very tender.
- 3.Remove the pan from the heat and stir in the fresh spinach. The residual heat will wilt the spinach in about a minute.
