Ingredients
- 100g red lentils, rinsed
- 2 medium carrots (approx. 200g), peeled and chopped
- 50g dried apricots, chopped
- 500ml water
- 1 teaspoon olive oil
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the chopped carrots and sauté for 2-3 minutes until they start to soften.
- 2.Add the rinsed red lentils, chopped dried apricots, and water to the saucepan.
- 3.Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the lentils are soft and the carrots are tender.
- 4.Remove the saucepan from the heat and allow the mixture to cool for a few minutes.
- 5.Carefully transfer the mixture to a blender. Blend until very smooth, adding a little extra water, breast milk, or formula if needed to achieve the desired consistency for your baby.
- 6.Serve a portion warm and store the remainder in airtight containers or ice cube trays for future meals. It can be refrigerated for 3 days or frozen for up to 3 months.
