Ingredients
- 200g sweet potato
- 100g carrots
- 30g dried red lentils
- 250ml water (or unsalted broth)
- 1 teaspoon olive oil
- 1 tiny pinch of ground cumin (optional)
Instructions
- 1.Peel the sweet potato and carrots, then chop them into small, uniform cubes.
- 2.Thoroughly rinse the red lentils in a fine-mesh sieve under cold running water.
- 3.Place the chopped vegetables and rinsed lentils into a small saucepan. Pour in the water, ensuring the ingredients are just covered.
- 4.Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes until the vegetables are very tender and the lentils are soft.
- 5.Remove from heat and let it cool slightly. Transfer the mixture to a blender, add the olive oil and optional cumin.
- 6.Blend until perfectly smooth. If needed, add a little more water, breast milk, or formula to achieve your desired consistency. Serve warm.
