Ingredients
- 150g lean lamb mince, trimmed of excess fat
- 400g sweet potato, peeled and cubed
- 50g unsulphured dried apricots
- 250ml water
- 1 teaspoon olive oil
Instructions
- 1.Place the lamb mince, cubed sweet potato, and dried apricots in a medium saucepan.
- 2.Add 250ml of water, bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the lamb is cooked through and the sweet potato is very tender.
- 3.Carefully transfer the mixture to a high-speed blender. Add the olive oil.
- 4.Blend until completely smooth. Add a splash of boiled water if the purée is too thick to reach your baby's preferred consistency.
- 5.Allow to cool completely before serving. Store extra portions in airtight containers in the refrigerator for up to 2 days or freeze in ice cube trays for up to 3 months.
