Ingredients
- 200g butternut squash, peeled and cubed
- 50g red lentils, rinsed
- 30g fresh spinach
- 300ml water or unsalted vegetable stock
- 1 teaspoon olive oil
- A tiny pinch of ground cumin (optional)
Instructions
- 1.In a small saucepan, heat the olive oil over medium heat. Add the cubed butternut squash and sauté for 2-3 minutes until slightly softened.
- 2.Add the rinsed red lentils and water or stock to the saucepan. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, or until the squash is tender and the lentils are soft and mushy.
- 3.Remove the saucepan from the heat. Stir in the fresh spinach and the pinch of cumin (if using). The residual heat will wilt the spinach in about a minute.
- 4.Carefully transfer the mixture to a blender. Blend until completely smooth. Add a little more water or breast milk/formula if needed to achieve your desired consistency.
- 5.Allow the purée to cool before serving. Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze in ice cube trays for longer storage.
