Ingredients
- 100g lamb loin or leg, fat trimmed, finely diced
- 150g sweet potato, peeled and cubed
- 1/2 small apple, peeled, cored, and cubed
- 1 sprig fresh rosemary (to be removed after cooking)
- 5ml extra virgin olive oil
- 150ml filtered water or unsalted homemade stock
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the diced lamb and cook for 2-3 minutes until lightly browned.
- 2.Add the cubed sweet potato, apple, the whole rosemary sprig, and water to the saucepan.
- 3.Bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the lamb is tender and the sweet potato is soft.
- 4.Remove and discard the rosemary sprig. Carefully transfer the contents of the saucepan to a high-speed blender.
- 5.Blend until very smooth, adding a little more water if needed to reach your baby's preferred consistency. Allow to cool completely before serving.
