Lamb, Zucchini, and Mint Purée

Ingredients
- 100g minced lamb
- 200g zucchini (1 medium)
- 20g onion, finely chopped
- 5ml olive oil (1 teaspoon)
- 4-5 fresh mint leaves
- 60ml water (or as needed for consistency)
Instructions
- 1.Heat the olive oil in a small saucepan over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until soft and translucent.
- 2.Add the minced lamb to the saucepan. Cook, breaking it up with a spoon, for 5-7 minutes until browned all over.
- 3.While the lamb cooks, wash and chop the zucchini into small cubes.
- 4.Add the zucchini to the saucepan with the lamb. Pour in 60ml of water, bring to a simmer, then cover and reduce the heat. Let it steam for 8-10 minutes, or until the zucchini is very tender.
- 5.Carefully transfer the entire contents of the saucepan to a blender. Add the fresh mint leaves.
- 6.Blend until completely smooth. Add more water, a little at a time, if needed to reach your baby's preferred consistency.
- 7.Allow the purée to cool to a safe temperature before serving. Store leftovers in an airtight container in the fridge for up to 2 days or freeze in ice cube trays for up to 3 months.
