Ingredients
- 100g lean lamb mince
- 1 medium sweet potato (approx. 200g), peeled and diced
- 75g frozen peas
- 250ml water
- 1 teaspoon olive oil
Instructions
- 1.Place the diced sweet potato in a small saucepan with the water. Bring to a boil, then reduce heat, cover, and simmer for about 8 minutes until it starts to soften.
- 2.Add the lamb mince to the saucepan, breaking it up with a spoon. Continue to simmer for another 5-7 minutes until the lamb is fully cooked through.
- 3.Add the frozen peas to the pot for the last 2 minutes of cooking time until they are bright green and tender.
- 4.Carefully drain any excess water, reserving a little on the side. Add the olive oil to the pot.
- 5.Blend the mixture using a hand blender or food processor until smooth. Add a small amount of the reserved water if needed to reach your desired consistency. Allow to cool completely before serving.
