Ingredients
- 300g sweet potato, peeled and cubed
- 100g red lentils, rinsed
- 50g fresh spinach
- 750ml water
- 1 tablespoon olive oil
Instructions
- 1.Place the cubed sweet potato, rinsed red lentils, and water into a medium saucepan. Bring to a boil over medium-high heat.
- 2.Reduce the heat to low, cover, and simmer for 15 minutes, or until the sweet potato is tender and the lentils are completely soft.
- 3.Remove the saucepan from the heat. Add the fresh spinach and olive oil, stirring until the spinach has wilted from the residual heat.
- 4.Carefully transfer the mixture to a high-speed blender. Blend until perfectly smooth, adding a splash more warm water if needed to reach your desired consistency.
- 5.Allow the purée to cool before serving. Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze in ice cube trays for easy portions.
