Ingredients
- 250g sweet potato, peeled and cubed
- 50g red lentils, rinsed
- 150g zucchini, chopped
- 400ml water
- 1 teaspoon olive oil
Instructions
- 1.Combine the cubed sweet potato, rinsed red lentils, and 400ml of water in a medium saucepan. Bring to a boil over medium-high heat.
- 2.Reduce the heat to low, cover, and simmer for about 10 minutes, until the sweet potato is tender and the lentils are soft.
- 3.Add the chopped zucchini to the saucepan and continue to simmer for another 5 minutes until the zucchini is also tender.
- 4.Remove from the heat. Carefully transfer the mixture to a blender, add the olive oil, and blend until completely smooth. Add a little more water if needed to reach the desired consistency.
- 5.Allow the purée to cool before serving. Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze in single-serving portions.
