Ingredients
- 100g lean lamb mince
- 50g fresh spinach
- 30g dried, unsulphured apricots, chopped
- 1/4 small onion, finely chopped
- 1 teaspoon olive oil
- 200ml water
Instructions
- 1.Gently heat the olive oil in a small saucepan over medium-low heat. Add the finely chopped onion and cook for 2-3 minutes until soft and translucent.
- 2.Add the lamb mince to the saucepan. Cook, breaking it up with a spoon, until it is fully browned.
- 3.Stir in the chopped apricots and add the water. Bring the mixture to a simmer, then reduce the heat, cover, and cook for 10 minutes until the lamb is tender.
- 4.Add the fresh spinach to the pan and stir until it has completely wilted, which should take about 1-2 minutes.
- 5.Carefully transfer the mixture to a high-speed blender. Blend until perfectly smooth. Add a little more warm water if needed to achieve your baby's desired consistency. Allow to cool before serving.
