Ingredients
- 100g lean lamb mince or finely diced lamb stew meat
- 150g carrots (about 2 medium), peeled and chopped
- 30g unsulphured dried apricots, chopped
- 250ml water or unsalted homemade bone broth
- 1 teaspoon olive oil
Instructions
- 1.Place the lamb, chopped carrots, and chopped apricots into a small saucepan.
- 2.Pour in the water or broth, ensuring all ingredients are covered. Bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the lamb is cooked through and the carrots are very tender.
- 3.Carefully transfer the contents of the saucepan to a blender. Add the teaspoon of olive oil.
- 4.Blend until completely smooth. If the purée is too thick, add a tablespoon of the reserved cooking liquid at a time until you reach your desired consistency.
- 5.Allow to cool before serving. Store any leftovers in an airtight container in the refrigerator for up to 2 days or freeze in ice cube trays for individual portions.
