AIP Herbed Lamb with Root Vegetable Mash

Ingredients
- 300g ground lamb
- 300g sweet potatoes, peeled and cubed
- 150g parsnips, peeled and cubed
- 1 medium yellow onion
- 2 cloves garlic
- 150g fresh spinach
- 30ml extra virgin olive oil
- 1 tablespoon fresh rosemary, finely chopped
- 1 teaspoon fresh thyme, finely chopped
- Sea salt to taste
Instructions
- 1.Place the cubed sweet potatoes and parsnips in a pot of salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender. Drain well.
- 2.While the vegetables are boiling, finely chop half of the onion and one clove of garlic. In a bowl, combine the ground lamb, chopped onion, garlic, rosemary, thyme, and a pinch of salt. Mix gently and form into 4 small patties.
- 3.Heat 15ml of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4-5 minutes per side, until browned and cooked through. Remove from the skillet and set aside.
- 4.Finely slice the remaining onion and garlic. Add the remaining 15ml of olive oil to the same skillet and sauté the onion and garlic for 2-3 minutes until fragrant.
- 5.Add the fresh spinach to the skillet and cook, stirring, for 2-3 minutes until it has wilted completely. Season with a pinch of salt.
- 6.Mash the drained sweet potatoes and parsnips with a fork or masher until smooth. You can add a drizzle of olive oil for extra creaminess. Season with salt.
- 7.To serve, divide the root vegetable mash between two plates, top with two lamb patties each, and serve the sautéed spinach on the side.
