Ingredients
- 500g ground lamb
- 800g butternut squash, peeled and diced
- 200g kale, stems removed and chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cm piece fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 tablespoon fresh thyme, chopped
- 45 ml extra virgin olive oil
- 120 ml water or bone broth
- Small bunch of fresh parsley, chopped
- Sea salt, to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 5 minutes until softened.
- 2.Add the ground lamb, breaking it up with a spoon, and cook for 7-8 minutes until browned. Drain any excess fat if desired.
- 3.Stir in the minced garlic, grated ginger, turmeric, and thyme. Cook for 1 minute until fragrant.
- 4.Add the diced butternut squash, water or bone broth, and a pinch of salt. Bring to a simmer, then cover and cook for 15-20 minutes until the squash is tender.
- 5.Stir in the chopped kale and cook for 3-5 minutes until wilted.
- 6.Remove from the heat, stir in the fresh parsley, adjust seasoning with salt, and serve warm.
