Ingredients
- 300g ground lamb
- 300g sweet potato, peeled and diced
- 200g zucchini, diced
- 100g fresh spinach
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp dried oregano
- 1/2 lemon, for juice
- Sea salt to taste
Instructions
- 1.In a bowl, combine the ground lamb, half of the minced garlic, chopped rosemary, oregano, and a pinch of sea salt. Mix well and form into 4 small patties. Set aside.
- 2.Heat 15ml of olive oil in a large skillet over medium heat. Add the chopped onion and the remaining garlic, and sauté for 2-3 minutes until softened and fragrant.
- 3.Add the diced sweet potato to the skillet with a splash of water. Cover and cook for 8-10 minutes, stirring occasionally, until the sweet potato begins to soften.
- 4.Add the diced zucchini to the skillet and continue to cook for another 5-7 minutes, until all vegetables are tender. Stir in the fresh spinach and cook until just wilted. Season the hash with sea salt and a squeeze of lemon juice.
- 5.While the hash finishes, heat the remaining 15ml of olive oil in a separate pan over medium-high heat. Cook the lamb patties for 3-4 minutes per side, or until cooked through and nicely browned.
- 6.Serve the herbed lamb patties immediately alongside the warm sweet potato and zucchini hash.
