Ingredients
- 300g lean ground lamb
- 2 medium zucchini
- 2 medium carrots
- 1/2 red onion, finely chopped
- 20g fresh mint, chopped
- 20g fresh parsley, chopped
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 30ml fresh lemon juice
- Sea salt to taste
Instructions
- 1.In a bowl, combine the ground lamb, finely chopped red onion, half the chopped mint, half the chopped parsley, 1 minced garlic clove, and a pinch of salt. Mix well and form into 4-6 small patties.
- 2.Use a spiralizer or vegetable peeler to create 'noodles' from the zucchini and carrots. Place them in a large bowl.
- 3.In a small bowl, whisk together the olive oil, lemon juice, the remaining minced garlic, mint, parsley, and another pinch of salt to create the dressing.
- 4.Pour the dressing over the zucchini and carrot noodles and toss gently to combine. Set aside to marinate while you cook the lamb.
- 5.Heat a large skillet over medium-high heat. Add the lamb patties and cook for 4-5 minutes per side, or until cooked through and nicely browned.
- 6.Serve the warm lamb patties immediately over the fresh zucchini-carrot salad.
