Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the lamb mince to the skillet. Break it up with a spoon and cook until browned all over, about 5-7 minutes. Drain any excess fat if necessary.
- 3.Stir in the minced garlic, dried rosemary, salt, and pepper. Cook for another minute until fragrant.
- 4.Add the sliced red bell pepper and drained artichoke hearts to the skillet. Cook for 5-6 minutes, stirring occasionally, until the pepper is tender-crisp.
