Ingredients
- 400g ground lamb
- 1 medium zucchini (approx. 200g)
- 150g full-fat Greek yogurt
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon olive oil
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.To make the raita, grate the zucchini and use your hands or a clean cloth to squeeze out as much excess water as possible. This step is crucial for a creamy, not watery, texture.
- 2.In a medium bowl, combine the squeezed zucchini, Greek yogurt, half of the chopped mint, one minced garlic clove, and the lemon juice. Season with salt and pepper, stir well, and set aside in the refrigerator to chill.
- 3.In a separate large bowl, combine the ground lamb, chopped onion, the remaining minced garlic, the other half of the chopped mint, cumin, and coriander. Season generously with salt and pepper.
- 4.Gently mix the lamb mixture with your hands until just combined. Be careful not to overwork the meat. Divide the mixture into 8 equal portions and shape each into an oval kofta (sausage shape).
