Ingredients
- 500g ground lamb
- 1 medium onion, finely grated
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 500g cauliflower, riced
- 50g fresh parsley, chopped
- 25g fresh mint, chopped
- 1 large tomato, finely diced
- 1/2 cucumber, finely diced
- 75ml extra virgin olive oil
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, grated onion, minced garlic, cumin, coriander, and smoked paprika. Season with salt and pepper and mix gently with your hands until just combined.
- 2.Divide the lamb mixture into 8 equal portions and shape each into an oval kofta. You can thread them onto skewers if desired.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas cook, prepare the tabbouleh. In a separate large bowl, combine the riced cauliflower, chopped parsley, mint, diced tomato, and diced cucumber.
- 5.In a small bowl, whisk together the remaining 60ml of extra virgin olive oil and the lemon juice. Pour the dressing over the cauliflower mixture, season with salt and pepper, and toss well to combine.
- 6.Serve the warm lamb koftas immediately alongside the fresh cauliflower tabbouleh.
