- 300g cod loin, cut into large chunks
- 75g cured chorizo sausage, sliced
- 100g kale, stems removed and roughly chopped
- 150g cherry tomatoes, halved
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 250ml low-sodium vegetable stock
- 50g Kalamata olives, pitted
- 5g smoked paprika
- Salt and fresh black pepper to taste
- 1 small handful fresh parsley, chopped, for garnish
Instructions
- 1.Season the cod chunks with salt and pepper. Heat olive oil in a large skillet or pan over medium-high heat. Add the sliced chorizo and cook for 2-3 minutes until it's crispy and has released its oils.
- 2.Use a slotted spoon to remove the chorizo and set it aside, leaving the flavorful oil in the pan. Add the chopped onion to the pan and sauté for 5-7 minutes until softened and translucent.
- 3.Stir in the minced garlic and smoked paprika, cooking for another minute until fragrant. Add the halved cherry tomatoes and vegetable stock, bringing the mixture to a simmer.
- 4.Cook for about 5 minutes, gently pressing the tomatoes with a spoon to help them break down and form a sauce.
- 5.Stir in the chopped kale and olives. Allow the kale to wilt for 2-3 minutes.
- 6.Gently nestle the seasoned cod pieces into the stew. Reduce the heat, cover the pan, and let it simmer for 6-8 minutes, or until the cod is cooked through and flakes easily with a fork.
- 7.Stir the reserved crispy chorizo back into the stew. Garnish with fresh parsley and serve immediately.
