Ingredients
- 300g lean ground lamb
- 400g sweet potato
- 150g kale
- 1 medium onion
- 2 cloves garlic
- 15ml extra virgin olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon turmeric powder
- 60ml water or AIP-compliant bone broth
- Sea salt to taste
Instructions
- 1.Prepare the vegetables: peel and dice the sweet potato into 1-2 cm cubes, finely chop the onion and garlic, and roughly chop the kale leaves after removing the tough stems.
- 2.Heat olive oil in a large skillet over medium-high heat. Add the onion and sauté for 3-4 minutes until softened.
- 3.Add the ground lamb, breaking it up with a spoon. Cook for 5-7 minutes until browned all over.
- 4.Stir in the chopped garlic, rosemary, and turmeric. Cook for another minute until fragrant.
- 5.Add the diced sweet potato, salt, and water/broth. Stir well, cover, and reduce heat to medium-low. Simmer for 10-12 minutes until the sweet potatoes are tender.
- 6.Uncover the pan, add the chopped kale, and increase the heat. Sauté for 2-3 minutes until the kale is wilted. Adjust salt to taste and serve immediately.
