Ingredients
- 400g ground lamb
- 1 small head cauliflower (approx. 400g)
- 1 small cucumber
- 100g cherry tomatoes
- 1 large bunch fresh parsley
- 1 small bunch fresh mint
- 1 small red onion
- 2 cloves garlic
- 1 lemon
- 3 tablespoons extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and freshly ground black pepper to taste
Instructions
- 1.Finely chop the parsley, mint, cucumber, and half of the red onion. Halve the cherry tomatoes. Grate the cauliflower or pulse it in a food processor to create a rice-like texture. Combine all these tabbouleh ingredients in a large bowl.
- 2.Create the dressing by whisking together 2 tablespoons of olive oil, the juice of the entire lemon, salt, and pepper. Pour over the cauliflower mixture and toss well to combine. Set aside to let the flavors meld.
- 3.Finely chop the remaining half of the red onion and mince the garlic cloves. In a separate bowl, combine the ground lamb, chopped onion, garlic, cumin, coriander, and a generous pinch of salt and pepper.
- 4.Using your hands, mix the lamb mixture thoroughly and form it into 6-8 small, oblong kofta shapes.
- 5.Heat the remaining 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning regularly, until they are browned on all sides and cooked through.
- 6.Serve the warm lamb koftas immediately alongside the fresh cauliflower tabbouleh.
