Ingredients
- 400g lamb mince
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 30g fresh mint, chopped
- 30ml olive oil
- Salt and black pepper to taste
- 150g full-fat Greek yogurt
- 100g cucumber, grated
- 15ml fresh lemon juice
Instructions
- 1.In a large bowl, combine the lamb mince, finely chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, and half of the chopped fresh mint. Season generously with salt and pepper.
- 2.Use your hands to thoroughly mix the ingredients. Divide the mixture into 8 equal portions and shape each into a small, oval kofta.
- 3.Heat the olive oil in a large skillet over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas are cooking, prepare the raita. Squeeze the grated cucumber to remove excess water. In a separate bowl, combine the Greek yogurt, squeezed cucumber, the remaining chopped mint, and lemon juice. Season with a pinch of salt.
- 5.Serve the hot lamb koftas immediately with the cool mint and cucumber raita on the side for a delicious and balanced keto meal.
