Ingredients
- 300g ground lamb
- 2 medium zucchini (approx. 400g), spiralized or thinly sliced
- 100g feta cheese, crumbled
- 100g cherry tomatoes, halved
- 1 small red onion
- 2 cloves garlic, minced
- 15g fresh mint, finely chopped
- 15g fresh parsley, finely chopped
- 1 lemon, for juice
- 45ml extra virgin olive oil, divided
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- 1.In a medium bowl, combine the ground lamb, half of the minced garlic, chopped mint, parsley, cumin, coriander, salt, and pepper. Mix well with your hands and form the mixture into 6-8 small oval koftas.
- 2.Thinly slice half of the red onion. In a large bowl, combine the spiralized zucchini, halved cherry tomatoes, crumbled feta, and the sliced red onion.
- 3.To make the dressing, whisk together 30ml (2 tablespoons) of olive oil, the juice of half a lemon, the remaining minced garlic, dried oregano, salt, and pepper in a small bowl.
- 4.Heat the remaining 15ml (1 tablespoon) of olive oil in a large skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned and cooked through.
- 5.Just before serving, pour the dressing over the zucchini salad and toss gently to combine.
- 6.Serve the warm lamb koftas immediately alongside the fresh zucchini-feta salad, with an extra wedge of lemon if desired.
