Ingredients
- 500g ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30g fresh mint, chopped
- 30g fresh parsley, chopped
- 1 tsp dried rosemary
- 2 tbsp olive oil
- 1 large cucumber, peeled and diced
- 2 large ripe avocados
- 1 head of lettuce (e.g., romaine or butter lettuce)
- Juice of 1 lemon
- Sea salt to taste
Instructions
- 1.In a large bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped mint, chopped parsley, dried rosemary, and a generous pinch of sea salt. Use your hands to mix until just combined, being careful not to overwork the meat.
- 2.Divide the mixture into 8 equal portions and shape them into small patties, about 2cm thick.
- 3.Heat 2 tablespoons of olive oil in a large skillet or frying pan over medium-high heat.
- 4.Carefully place the patties in the hot pan and cook for 4-5 minutes on each side, until nicely browned and cooked through to your preference.
- 5.While the patties are cooking, prepare the salad. In a medium bowl, mash the flesh of the avocados with a fork until creamy.
- 6.Stir the lemon juice and a pinch of salt into the mashed avocado. Gently fold in the diced cucumber to create a chunky, creamy dressing.
- 7.To serve, arrange a bed of fresh lettuce leaves on four plates. Top with two warm lamb patties each and a generous dollop of the creamy avocado-cucumber salad.
