Ingredients
- 300g lamb loin or leg steak, cut into 2-3 cm cubes
- 1 medium fennel bulb (approx. 200g)
- 1 medium zucchini (approx. 200g)
- 1 small red onion
- 2 cloves garlic
- 100g cherry tomatoes
- 50g Kalamata olives, pitted
- 30ml extra virgin olive oil
- 1/2 lemon, for juice
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- 1.Prepare all your ingredients. Cut the lamb into cubes, thinly slice the red onion and garlic. Trim the fennel bulb and slice it thinly. Dice the zucchini and halve the cherry tomatoes.
- 2.Heat 15ml of olive oil in a large skillet over medium-high heat. Season the lamb cubes with salt and pepper and sear on all sides until well browned. Remove from the skillet and set aside.
- 3.Add the remaining 15ml of olive oil to the same skillet. Add the sliced onion and fennel, cooking for 5-7 minutes until softened and lightly caramelized.
- 4.Add the minced garlic and cook for another minute until fragrant. Add the diced zucchini and cook for 3-4 minutes until it begins to soften.
- 5.Return the seared lamb to the pan along with the halved cherry tomatoes, pitted olives, and dried oregano. Stir to combine and cook for 5-7 minutes, until the lamb is cooked to your liking and the vegetables are tender.
- 6.Remove the skillet from the heat. Squeeze fresh lemon juice over the entire dish and stir. Taste and adjust seasoning if needed. Serve immediately.
