- 400g lean lamb mince
- 2 medium zucchinis
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 20g fresh mint, chopped
- 20g fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 lemon (for juice)
- 45ml extra virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions
- 1.In a large bowl, combine the lamb mince, finely chopped onion, minced garlic, half of the chopped mint and parsley, ground cumin, and ground coriander. Season generously with salt and pepper.
- 2.Mix the ingredients thoroughly with your hands until well combined, then shape the mixture into 6-8 elongated koftas.
- 3.Heat 15ml of olive oil in a large frying pan over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas are cooking, prepare the salad. Use a vegetable peeler to shave the zucchinis into long, thin ribbons. Place them in a separate bowl.
- 5.Add the remaining chopped mint, parsley, the juice of one lemon, and the remaining 30ml of extra virgin olive oil to the zucchini ribbons. Toss gently to combine and season with a pinch of salt and pepper.
- 6.Arrange the zucchini-mint salad on two plates and top with the warm lamb koftas to serve immediately.
