Ingredients
- 300g ground lamb
- 300g carrots
- 300g zucchini
- 1 small yellow onion
- 2 cloves garlic
- 2 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Sea salt to taste
Instructions
- 1.Peel and chop the carrots and zucchini. Place them in a pot, cover with water, bring to a boil, and simmer for 15-20 minutes until very tender.
- 2.In a bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped mint, parsley, and a pinch of sea salt. Mix well and form into 4 patties.
- 3.Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes per side until browned and cooked through.
- 4.Drain the cooked vegetables and return them to the pot. Mash with the remaining 1 tablespoon of olive oil, lemon juice, and another pinch of salt until smooth.
- 5.Serve the warm lamb patties with the zucchini-carrot mash. Garnish with extra fresh parsley if desired.
