Ingredients
- 1 medium acorn squash (~800g)
- 300g ground turkey
- 2 stalks celery, finely chopped
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 30g unsweetened dried cranberries
- 1 tbsp fresh sage, chopped (or 1 tsp dried)
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- 1/2 tsp ground cinnamon
- Sea salt to taste
Instructions
- 1.Preheat your oven to 200°C. Carefully cut the acorn squash in half lengthwise and scoop out the seeds.
- 2.Brush the cut sides of the squash with 1 tbsp of olive oil and sprinkle with sea salt. Place cut-side down on a baking sheet.
- 3.Roast for 30-40 minutes, or until the squash is tender when pierced with a fork.
- 4.While the squash roasts, heat the remaining 1 tbsp of olive oil in a skillet over medium heat. Add the onion and celery and sauté for 5-7 minutes until softened.
- 5.Add the ground turkey to the skillet, breaking it up with a spoon. Cook for 8-10 minutes until browned. Drain any excess fat.
- 6.Stir in the chopped sage, thyme, cinnamon, dried cranberries, and a pinch of salt. Cook for another 2 minutes for the flavors to combine.
- 7.Once the squash is tender, remove it from the oven and carefully flip it over. Divide the turkey mixture evenly and fill each squash half.
- 8.Return the stuffed squash to the oven and bake for an additional 10 minutes to heat through. Serve immediately.
