Ingredients
- 300g ground lamb
- 300g sweet potato
- 100g kale, tough stems removed and chopped
- 1 medium zucchini, grated
- 1 large carrot, grated
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 2 cm fresh ginger, grated
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp turmeric powder
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt to taste
Instructions
- 1.Preheat your oven to 200°C. Peel and dice the sweet potato into 2cm cubes. On a baking sheet, toss the cubes with 1 tbsp of olive oil and a pinch of salt, then roast for 20-25 minutes until tender.
- 2.While the sweet potatoes roast, combine the ground lamb, grated ginger, chopped rosemary, turmeric powder, and a pinch of salt in a mixing bowl. Form the mixture into 4 small patties.
- 3.Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4-5 minutes per side, until browned and cooked through. Remove from the skillet and set aside.
- 4.In the same skillet, add the finely chopped red onion and minced garlic. Sauté for 2-3 minutes until fragrant and softened.
- 5.Add the grated zucchini and carrot to the skillet. Cook for another 3-4 minutes, stirring occasionally, until the vegetables have softened.
- 6.Add the chopped kale to the skillet and cook for 2-3 minutes, stirring continuously until it has wilted down.
- 7.Return the roasted sweet potatoes to the skillet with the other vegetables. Drizzle with the lemon juice, toss everything together to combine, and season with salt if needed.
- 8.Divide the warm vegetable salad between two plates and top each with two herbed lamb patties to serve.
