Ingredients
- 1 large eggplant (approx. 400g)
- 250g lamb mince
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, finely diced
- 100g feta cheese, crumbled
- 30ml olive oil
- 1 tsp cumin powder
- 1 tsp dried oregano
- Salt and freshly ground black pepper to taste
- Juice of half a lemon
- Fresh parsley, chopped (for garnish)
Instructions
- 1.Preheat your oven to 200°C (400°F). Slice the eggplant in half lengthwise and carefully scoop out the flesh, leaving a 1cm border to create 'boats'. Finely chop the scooped-out flesh.
- 2.Brush the eggplant boats inside and out with 15ml of olive oil and season with salt and pepper. Place them cut-side up on a baking sheet and bake for 15 minutes until they begin to soften.
- 3.While the boats are baking, heat the remaining 15ml of olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened.
- 4.Add the minced garlic and lamb mince to the skillet. Cook, breaking up the meat with a spoon, until it is browned all over, about 5-7 minutes.
- 5.Stir in the chopped bell pepper, the reserved chopped eggplant flesh, cumin, and oregano. Season with salt and pepper. Cook for another 5-7 minutes, until the vegetables are tender.
- 6.Remove the skillet from the heat. Stir in the lemon juice and half of the crumbled feta cheese.
- 7.Carefully spoon the lamb mixture evenly into the pre-baked eggplant boats.
- 8.Sprinkle the remaining feta cheese over the top of the stuffed eggplants.
- 9.Return the baking sheet to the oven and bake for another 15-20 minutes, or until the eggplant is fully tender and the feta is golden and bubbly.
- 10.Garnish with fresh parsley before serving.
