Ingredients
- 1 1/2 lbs turkey breast
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 medium onion, sliced
- 2 large sweet potatoes, peeled and cubed
- 1 bunch kale, stems removed and roughly chopped
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- 1.Preheat oven to 375°F (190°C). Place turkey breast on a baking sheet and rub with 1 tbsp olive oil, rosemary, thyme, salt, and pepper.
- 2.Roast turkey for 25–30 minutes until cooked through and juices run clear. Let rest before slicing.
- 3.While turkey roasts, place sweet potato cubes in a pot, cover with water, and bring to a boil. Cook for 15 minutes until tender, then drain and mash with 1 tsp olive oil and a pinch of salt.
- 4.Heat 1 tbsp olive oil in a skillet over medium heat. Add onion and garlic, sauté for 3 minutes, then add kale. Cook until wilted, about 5 minutes. Finish with a squeeze of lemon juice.
- 5.Slice turkey and serve alongside sweet potato mash and garlic kale.
