Ingredients
- 1 lb turkey breast
- 2 cups carrots, sliced
- 2 cups zucchini, chopped
- 1 cup parsnips, diced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 lemon, juiced
- 1/2 tsp sea salt
Instructions
- 1.Preheat oven to 400°F and line a baking sheet with parchment paper.
- 2.Place turkey breast on one side of the baking sheet and rub with 1 tbsp olive oil, minced garlic, rosemary, thyme, lemon juice, and sea salt.
- 3.Toss carrots, zucchini, and parsnips with remaining olive oil and a pinch of sea salt, then spread evenly on the other side of the baking sheet.
- 4.Roast for 25–30 minutes, flipping vegetables halfway, until turkey is cooked through (165°F internal temperature) and vegetables are tender.
- 5.Slice turkey and serve with roasted vegetables, drizzling any pan juices on top.
