Ingredients
- 600g lamb leg, cubed
- 2 tbsp extra virgin olive oil
- 1 large leek, sliced
- 3 cloves garlic, minced
- 2 cm piece of fresh ginger, grated
- 2 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 2 large carrots, sliced
- 500g butternut squash, peeled and cubed
- 2 medium zucchini, chopped
- 500 ml bone broth or water
- 1 tbsp apple cider vinegar
- 1 sprig fresh rosemary
- Sea salt to taste
- Fresh parsley or cilantro for garnish
Instructions
- 1.Pat the lamb cubes dry and season with sea salt. Heat 1 tbsp of olive oil in a large pot or Dutch oven over medium-high heat. Brown the lamb in batches, then remove from the pot and set aside.
- 2.Reduce heat to medium. Add the remaining 1 tbsp of olive oil to the pot. Sauté the sliced leek and carrots for 5-7 minutes, until they begin to soften.
- 3.Add the minced garlic and grated ginger. Cook for one minute until fragrant. Stir in the ground turmeric and cinnamon and cook for another 30 seconds.
- 4.Return the browned lamb to the pot. Pour in the bone broth and apple cider vinegar, and add the sprig of fresh rosemary. Bring the mixture to a simmer.
- 5.Reduce the heat to low, cover the pot, and let it simmer gently for 25 minutes to allow the flavors to meld.
- 6.Add the cubed butternut squash and chopped zucchini to the stew. Stir gently, replace the cover, and continue to simmer for another 15-20 minutes, or until the lamb is tender and the vegetables are cooked through.
- 7.Remove the rosemary sprig before serving. Taste and adjust seasoning with additional sea salt if needed. Serve hot, garnished with fresh parsley or cilantro.
