Ingredients
- 400g ground turkey
- 250g sweet potato
- 200g zucchini
- 1 small onion
- 2 cloves garlic
- 15g fresh ginger
- 1 teaspoon ground turmeric
- 15g fresh parsley, chopped
- 30ml olive oil
- 15ml lemon juice
- Salt to taste
Instructions
- 1.Prepare the ingredients. Peel and grate the sweet potato and zucchini. Finely chop the onion, mince the garlic, and grate the ginger.
- 2.In a medium bowl, combine the ground turkey, half of the minced garlic, the grated ginger, turmeric, chopped parsley, and a pinch of salt. Mix well without overworking, then form into 4 patties.
- 3.Heat 15ml of olive oil in a large skillet over medium-high heat. Carefully place the patties in the skillet and cook for 5-7 minutes per side, until golden brown and cooked through. Remove and set aside.
- 4.In the same skillet, add the remaining 15ml of olive oil. Sauté the chopped onion and the rest of the garlic for 2-3 minutes until fragrant and softened.
- 5.Add the grated sweet potato and zucchini to the skillet. Season with salt and cook, stirring occasionally, for 8-10 minutes until the vegetables are tender.
- 6.Stir the fresh lemon juice into the hash. Serve the warm turkey patties immediately with the sweet potato and zucchini hash.
