Ingredients
- 300g ground lamb
- 400g sweet potato, peeled and diced
- 150g carrots, peeled and diced
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh ginger, grated
- 30ml extra virgin olive oil
- 1 teaspoon ground turmeric
- 100g fresh spinach
- 15g fresh mint, chopped
- Juice of 1/2 lemon
- Sea salt to taste
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced garlic and grated ginger to the pan, and cook for another minute until fragrant.
- 3.Add the ground lamb, breaking it up with a spoon. Cook until browned all over, about 5-7 minutes. Drain any excess fat if necessary.
- 4.Stir in the diced sweet potato, carrots, and ground turmeric. Season generously with sea salt.
- 5.Add 60ml of water to the pan, bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender.
- 6.Remove the pan from the heat. Stir in the fresh spinach until it wilts completely. Finish by stirring in the fresh mint and lemon juice. Serve warm.
